Vintage Brown Mushrooms with Toasted Oats

I. INGREDIENTSCarbohydrates:
Organic rolled oats (1 small bowl – lightly toasted)
Vegetables:
Red Bell Pepper (1 big size – full – big diced)
Brown Button Mushrooms (1 bowl full – as it is)
French Beans (medium size – handful – hand broken)
Avocado (1 medium size – full – thickly cut into wedges)
Garlic (medium size – 3 to 4 cloves – hand pressed)
Herbs & Spices:
Fresh Cilantro (3 to 4 sprigs – as it is)
Lemon (1 half)
Star Anise (2 to 3 – as it is)
Peppercorns (5 to 6 – as it is)
Cardamom (2 cloves – slit along the length)
Bay leaf (small size – 3 to 4 – as it is)
Cloves (medium size – 4 to 5 – as it is)
Condiments:
Salt (add to taste – iodised – low sodium) [provides rehydration and muscle movement]

II. METHOD
Oats
1. Heat up a frying pan and sprinkle oats into it.
2. Toast it until light brown. It will take around 2 to 3 minutes. Gently shake pan for even heating.
3. Convert oats onto a plate to cool down
Veggies and spices
1. Season all vegetables (mushrooms separately from bell pepper and French beans) with salt and pepper and keep them aside
2. Heat up a pan and put spices onto it
3. Gently shake the pan to allow uniform heating, it also helps the oils and aroma to be extracted from spices to their maximum potential
4. Toss garlic into the pan and cook it for around 1 min until they turn light brown
5. Put mushrooms into the pan and cover it
6. Simmer for around 5 to 6 minutes, this will help mushrooms absorb all the flavours
7. Open the cover and gently toss French beans and red bell pepper into it, cook in open for around 4 minutes until the veggies become al dente
8. Take the pan off from the flame
III. SERVING AND PLATING
1. Gently sprinkle the oats onto the veggies pan and mix with light hand
2. Squeeze lemon juice
3. Lay cilantro sprig for decoration
