Eggplant Puree:

1. Put whole tomatoes, onions, garlic, chilli and eggplant into a preheated iron skillet

2. Season with salt and cover it, let it smoke

3. Keep rotating the vegetables in between so that they all cook uniformly

4. Cook until all vegetables become soft and smoky flavour gets absorbed

5. Take out eggplant and remove the peel, put it back into skillet and mix everything well

6. Keep mixing and seasoning until you get your desired consistency and take off from heat


Vinaigrette:

1. Finley chop sage leaves

2. Crush few walnuts

3. Put half tablespoon lemon juice in a bowl

4. Put 1 teaspoon olive oil in the bowl

5. Mix sage and walnut into it

6. Season with salt

7. Put some whiteseasme seeds

8. Mix well



 
 
 



Vegetables:

1. Roughly cut Broccoli

2. Roughly cut Green Zucchini

3. Roughly cut carrots

4. Big diced tofu


Tom Yam:

1. Take a galangal and pound it to make it flat

2. Take 2 lemongrass and cut into 3 to 4 parts

3. Roughly tear off 6 to 7 kaffir lime leaves


Method:

1. Boil water in a pan (we will call it Tom Yam Pan)

2. Put healthy option of noodles

3. Cook until soft and rinse water

4. In a separate pan boil water and put kaffir lime, galangal and lemongrass into it and cover

5. Let it simmer for around 15 minutes

6. In a skillet put some sesame oil and put all vegetables and tofu

7. Stir fry for around 3 to 4 minutes until tofu starts getting firmer and vegetables become al dente

8. Pass the tom yam mixture through a colander and collect into a big bowl

9. Pour the clear liquid into the vegetable pan and take it off from the heat

10. Squeeze lemon and put some chilli

There I visited Mr. Tang from #thaiculture , Store No.6 at Level 2...He explained to me the recipe of this very delicious dish Tom Yam Noodles. I also had the opportunity to meet the manager Ms. Xiao Yan and the shopkeeper Ms. Kelly. I shared with them our Instagram Handle #foodpoollove and introduced to them that am a #foodblogger and a #homecook

It was a pleasure speaking to them and sharing a Thai Time with them 🙂

Vegetables:

1. A medium size finely chopped green bell pepper

2. Finely chopped carrots - 2 medium size

3. Finely chopped onions - 2 medium size

4. Finely chopped tomato - 1 medium size


Method:

1. Mix all vegetables in a properly whisked egg mixture

2. Season with salt and pepper

3. Heat an iron skillet and grease with olive oil

4. Pour the batter on the pan

5. Cook for around 1 and sprinkle fat free cheese

6. Also put half cut cherry tomatoes onto it

7. Then transfer the pan in a preheated oven and bake for 5 minutes

8. Bake until tomatoes start turning caramlised
